Brioche Sunflowers

Ingredients:
9 Tbsp unsalted butter
1 cup yogurt
1 Tbsp apple cider vinegar
1 tsp olive oil
2 eggs, divided
1/2 Tbsp baking powder
1 tsp salt
1 Tbsp sugar
3 1/2 cups flour
Black sesame seeds
White sesame seeds

Method:

Preheat oven to 400 degrees.

In a large bowl, beat together butter, yogurt, vinegar, olive oil and 1 egg with an electric hand mixer until well-combined.

Add baking powder, salt and sugar. Beat to combine.

Slowly sift in flour.

Beat until the dough begins to form.

Using your hands, form the dough into a ball.

Add ball of dough to a floured, clean work surface. Knead for 5 minutes.

Divide dough into 6-7 small balls of dough.

Take one ball of dough and slightly flatten it in your hand. Using a small glass, press the center of the dough out into a disk, leaving an edge of approximately 1/2 to 3/4-inch.

Cut edges with a knife to make an even number of tabs around the glass. Set glass aside.

Pinch together two tabs of dough at a time to form the petals. Set flower on a silicone mat or parchment paper lined baking sheet.

Repeat with remaining dough balls.

Beat the second egg lightly with a fork in a small bowl. Brush each dough flower with beaten egg. Add black sesame seeds to the center of each flower. Sprinkle white sesame seeds on the petals of each of the flowers.

Bake for 15-20 minutes, until cooked through and the tops are golden brown.
