Cupcake Lasagne

Ingredients:
6 sheets of lasagne
100g Ricotta
100g Marinara Sauce
100g Mozzarella
6 Basil sprigs
Instructions:
Boil lasagne sheets for 2-3 minutes to soften and allow to cool.
Place the softened sheets in to a muffin tray that has been sprayed with baking spray.
Fill each one with a tablespoon of ricotta followed by a tablespoon of tomato sauce.
Dry and dice the fresh mozzarella cheese.
Share the mozzarella between each muffin case.
Bake in the oven for 12-14 minutes at 180°C or 350°F.
Remove from oven and cool a little.
Add sprigs of basil.
