Peanut butter brittle: a quick recipe to enjoy your guests!

So crunchy and delicious, break the brittle into bite-sized pieces and serve for a simple yet satisfying treat!
 
INGREDIENTS
 200g sugar
 120 ml light corn syrup
 60ml (¼ cup) water
 ¼ tsp salt
 150g salted dry roasted peanuts
 2 tbsp unsalted butter
 1 ½ tsp vanilla extract
 ½ tsp baking soda

METHOD
  1. Butter a baking tray.
  2. Pour sugar, corn syrup, water, and salt into a pot off the heat and mix well. Cook until the mixture reaches 121ºC (250ºF) then add the peanuts.
  3. Mix and cook until it reaches 151ºC (305ºF) and remove from the heat.
  4. Quickly add the vanilla extract and butter, mix a little, then add the baking soda and mix well. Remove from the heat and pour onto the greased tray.
  5. Let cool for at least 1 hour then break into pieces with your hands.
