1) Sesame croissants: how to make them at home!
They are warm, buttery, and extra flaky!
INGREDIENTS
380g flour
10g yeast
2 tbsp sugar
60g unsalted butter, melted.
250ml warm milk
1 tsp salt
Sesame seeds as needed
Butter to spread each layer
Egg to apply before baking
METHOD
In a bowl mix milk with yeast, butter and sugar. Sift in the flour and add salt.
Divide the dough into 4 porcions and roll over each one. Spread first with butter and sprinkle with sesame seeds, repeat with others. Roll it over again and cut into 16 equal portions, spread again with butter and spin it into croissants.
Dip all croissants into sesame seeds and let it rest for 2 hours, spread with butter.
Bake at 180 ' C ( 356 ' F ) for 25 minutes

This technique makes preparing bakery-style croissants at home easy! The procedure is much easier than the one for puff pastry, and the result is great.
DIRECTIONS
Mix the milk with the fresh yeast. Add a couple of spoonfuls of flour to the milk and yeast and stir. Add the remaining flour, 3 teaspoons of oil, a pinch of salt, sugar and knead. Let the dough rise for at least two hours. Divide the dough equally into 8 balls. Roll out each ball into a circle. Layer these circles alternating them with melted butter. Roll out this layered dough until it’s thinner and slice it into triangles. Fill them with anything you like and roll them up. Let them rise for at least another half-hour, brush them with some egg yolk, sprinkle with some pearl sugar, and bake at 180°C for 20 minutes. Let them cool, and enjoy your breakfast!
