1) Veggies croquettes: quick and easy to make!

These vegetable potato croquettes are delicious baked or fried!
INGREDIENTS
• 1 kg potatoes
• 200g carrots
• 200g peas (can be frozen)
• 200g green beans (can be frozen)
• 1/4 cup chopped parsley
• salt
• pepper
• 2 eggs
• 100g Parmesan
• 3-4 eggs, beaten
• 2 cups breadcrumbs
METHOD
Boil and peel potatoes and carrots.
Cut the carrots, green beans.
Mash the potatoes, add 2 eggs, salt, pepper, parmesan
Add carrots, peas, asparagus beans, parsley.
Form balls and press with a flat bottom of cup
Dip in egg, then in breadcrumbs and fry until golden brown

• black pepper
• 5 tbsp flour
• 80g parmesan
• 5 tbsp bread crumbs
• 60g cheese
• salt
METHOD
Boil eggplant and potatoes. Mush. Add salt, pepper, garlic, parsley, eggs, parmesan. Mix. Add flour and mix. Add bread crumbs and mix again.
Form nuggets and put cheese in the middle.
Fry the nuggets in a pan in a large amount of oil.

1 tbsp butter
Deep-frying oil
METHOD

METHOD
- Remove the stalks of three peppers. Roll out the pepper with a rolling pin and chop finely.
- Heat butter in a pan. Add chopped pepper, salt, pepper. Fry.
- Mash cooked potatoes. Add cooked pepper, finely chopped ham, parmesan cheese, garlic, salt, pepper, egg, dill, nutmeg, paprika. Mix. Form the balls
- Add turmeric and paprika to the breadcrumbs, mix.
- Dip balls in flour, then in egg and breadcrumbs.
- Deep-fried.
