1. Chocolate avocado
INGREDIENTS
• Dark Chocolate
• Whipped cream
• Cocoa
• Avocado
• Coconut oil
METHOD
Cut an avocado in half.
With a spoon remove the shell carefully and place them on a grill.
Melt chocolate, add coconut oil and mix.
Pour the mixture over the avocados and freeze.
Flip the avocados, pour chocolate until covered and refreeze.
Decorate with cream and sprinkled cocoa.

2.Avocado ice cream
INGREDIENTS
For the Avocado Ice Cream:
4 Avocados
200g Sweetened Coconut Cream
200g Unsweetened Coconut Cream
2 Tsp Vanilla Extract
½ Tsp Salt
50ml Lime Juice
For the Chocolate Stone:
400g Chocolate Cake
125g Chocolate frosting
100g Chocolate
25g Coconut oil
METHOD
For the Avocado Ice Cream:
4 Avocados
200g Sweetened Coconut Cream
200g Unsweetened Coconut Cream
2 Tsp Vanilla Extract
½ Tsp Salt
50ml Lime Juice
For the Chocolate Stone:
400g Chocolate Cake
125g Chocolate frosting
100g Chocolate
25g Coconut oil
METHOD
- Cut the Avocados in half, remove the stone and scoop out the contents.
- Add to a blender with the remaining ingredients for the ice cream and blend to a smooth puree.
- Place in a bowl cover with cling film and freeze for an hour and a half to 2 hours you want smething the texture of soft serve ice cream.
- Keep the skins and dip in acidulated water to prevent discolouration, we will use these to rebuild our avocados.
- Blend the chocolate cake until it forms a crumb.
- Add in the chocolate frosting and mix together.
- Form this into balls roughly the same size as an avocado stone.
- Place the chocolate and coconut oil in a jug and melt in a microwave.
- Use a toothpick to hold the ‘fake’ stones and dip in the chocolate and set aside on baking parchment to chill for at least 30 minutes.
3. Chocolate avocado pudding
INGREDIENTS
Blend together
2 Avocados
¼ cup of Cocoa Powder
1 tsp of Vanilla Extract
1 tbsp of Coffee
2 tbsp of Coconut Oil
8 Dates (remove seeds)
Blend together

METHOD
Spoon pudding into Avocado peels, and enjoy!

3 tbsp cocoa powder;
90 g (3 oz) dark chocolate, melted;
¼ cup milk;
2 tbsp honey;
a pinch of salt.
