4 ways fritters: ready with a few ingredients in no-time!

1. Vegetable fritters
INGREDIENTS
2 potatoes
1 carrot, peeled
1 cup green onions
1 tsp vegetable oil
3 tbsp corn starch
salt
1/2 tsp paprika
 
METHOD 
1. Cut the potatoes into slices and cook until tender
2. Cook carrots in a pot
3. Cut the green onion
4. Finely grind boiled carrots
5. Mash the potatoes, mix all the ingredients.
6. Transfer to a zip bag and squeeze in preheated oil
 
2. Chicken and sweetcorn fritters
INGREDIENTS
2 Chicken Breasts.
2 Eggs.
75g Flour.
100g Mozzarella Cheese.
125g Sweetcorn.
75g Mayonnaise.
15g Chives (snipped).
Salt.
Pepper.
Cooking Oil.
 
METHOD
  1. Dice your chicken in to 1cm chunks.
  2. Place the chicken in a bowl with the eggs, flour, cheese, sweetcorn, mayonnaise, chives, salt and pepper and mix to form a sticky ‘paste’.
  3. Your hands are the best tools for this job.
  4. Place a little cooking oil in the base of a frying pan and take an ice cream scoop of the mix into the pan over a medium heat.
  5. Fry for 3-4 minutes.
  6. Flip and fry for a further 2-4 minutes or until the chicken is cooked through.
  7. Serve with sweet chili sauce or your favourite dip.
 
3. Cheese fritters
INGREDIENTS
Dough
200ml milk
600g flour
1 tablespoon yogurt
Instant yeast
2 tablespoons oil
1 tsp salt
 
Stuffing
400g cheese
  
METHOD
  1. In a mixing bowl, combine all dogh ingredients except for the flour, which should be added gradually. 
  2. Divide the dough into eight balls. 
  3. Roll out every ball and stuff it with the cheese. 
  4. Cover fritters with a cloth for 2 minutes and then fry them in the oil.
4.  Oven-baked zucchini fritters
INGREDIENTS 
1 egg
2 zucchini
breadcrumbs 
salt 
pepper
rosemary
parmesan 
 
METHOD 
1. Grate the zucchini, add parmesan, 1 egg and breadcrumbs. 
2. Add the zucchini and pepper to the batter.  
4. Mix together the grated zucchini, with salt and pepper. 
5. Using a spoon or medium sized ice cream scoop, scoop out about 2 tablespoons of the batter and drop onto the baking sheet. Continue until you run out of the batter. 
6. Bake for 15 minutes or until golden. 
7. Let it cool for 5 minutes before serving!
