Watermelon Cheesecake

INGREDIENTS:

BASE:
200 g biscuits
90 g of melted butter
1 teaspoon of green food coloring

Cream:
250 g of mascarpone
250 g of heavy cream
50 grams of icing sugar
8 grams of gelatin (+10 ml of heavy cream)

Watermelon layer:
250 grams of watermelon (deseeded)
40 grams of icing sugar
6 g of gelatin
Chocolate drops for decoration

METHOD:
Smash the biscuits and add green color to the melted butter. Now combine these ingredients and there is your base for the cheesecake. Distribute it on the mould and put it in freezer.
Meanwhile make a cream by mixing together mascarpone, heavy cream and icing sugar. Melt gelatin in 10 ml of heavy cream (but do not let it boil). Add gelatin mixture to the mascarpone cream and pour it over the base. Put it back in refrigerator.
By using hand mixer grind water melon and strain it. Put it in a pot and add acing sugar. Heat it and add gelatin (that was previously immersed in 10 ml of water for 10 minutes). Stir until it is melted. Pour it on the top of your cheesecake and let it get firm over night.
Decorate it with chocolate drops.
