INGREDIENTS for a 22 cm tube cake pan350g rice
salt
pepper
80g Parmesan cheese
3 eggs
300g zucchini
100g ham
100g scamorza cheese
DIRECTIONS
Thinly slice the zucchini, grill them for a couple of minutes on each side. In the meantime, cook the rice for about 12 minutes, let it cool down in a bowl, then add salt, pepper, Parmesan cheese, and the eggs. Butter a 22 cm tube cake pan and cover it with the grilled zucchini slices. Add half of the rice to the pan, make a groove and fill it with diced ham, cut up leftover zucchini, and the scamorza cheese. Cover with the remaining rice and fold down the ends of the zucchini. Bake for about 35 minutes. Once it has cooled, flip the pan onto a serving dish.
