Spaghetti with zucchini in Positano: the Italian recipe you can't miss

Here is an easy and delicious recipe for Spaghetti with zucchini (courgettes) also known as Spaghetti alla Nerano!
It originated here in Amalfi Coast, not far from Positano!
Its simplicity is the key of its greatness, it contains very few ingredients but it is an explosion of taste.
Not famous as it should be, it is a "must try" if you visit the area or if you wanna make it at home, but we give you a tip: Always remember to save some pasta water if you want it to be super creamy!

Ingredients
400g of spaghetti
2 medium zucchini (Courgette)
8 tablespoons of olive oil
2 cloves of garlic
1 handful of basil leaves
80g of grana padano or provolone cheese
salt & pepper

Steps
1. Cook your pasta in salted boiling water
2. Cut the zucchini into slices of 0.5 cm and fry them in a pan with
olive oil and garlic
3. Remove the garlic clove when it turns golden
4.Strain your pasta for 2 min. before
of the cooking time indicated on the package and reserve some
pasta water
7. Add your pasta, salt, pepper and the reserved pasta water into
the zucchini and stir it well
8. Switch of the fire when the water is almost absorbed, add your cheese and mix it well
9. Serve it with a sprinkle of Grana padano or provolone and garnish with fresh basil
