Mini meatballs muffins: the single portions filled, tasty and gooey!

INGREDIENTS
For the mushrooms:
Olive oil
160g of mushrooms
Pepper
Salt
For the meatballs:
300g of stale bread
500g of minced meat
2 eggs
Parsley
Salt
For the filling:
70g of baked ham
120g of provola cheese
METHOD
1. In a pan pour the olive oil and add the mushrooms. Let them cook for a few minutes until they are soft. Season with salt and pepper and remove from the heat.
2. In a bowl break the bread and pour the water over it. Let it soak for 10 minutes. Squeeze the bread well to remove all the water.
3. In a mixing bowl with the minced meat add the prepared bread, eggs, parsley, and salt and start with mixing. Mix with hands to combine all well together.
4. Form the balls and transfer them to the paper cups (sprinkle with the breadcrumbs). With your fingers make the hole and add the ham, cheese, and prepared mushrooms. Cover with the meat to seal each one.
5. Transfer them to the baking tray covered with parchment paper. Transfer to the oven and bake at 180°C/360°F for 25 minutes.
