Lemon cheesecake glasses: the delicious dessert to prepare in no time!

This incredible dessert will satisfy your sweet tooth for sure!

INGREDIENTS

For the crumb:

70 g (5 tbsp) butter;
70 g (⅓ cup) sugar;
a pinch of salt;
150g (1 cup) all-purpose flour.

For the cream:

150g (¾ cup) sugar;
360ml (1 1/2 cup) water;
40g (5 tbsp) cornstarch:
2 egg yolks;
2 lemons (zest and juice).
30g (2 tbsp) butter

For the meringue:

2 egg whites;
a pinch of salt;
100 g (½ cup) sugar.

METHOD

Preheat the oven to 200C/400F.
Combine flour with salt, sugar and butter until crumbs form. Bake crumbs for 15 minutes.
Over medium heat whisk water, sugar, salt and cornstarch.
Boil until it thickens (5-7 minutes).
Whisk in lemon juice, zest and 2 yolks. Remove from heat, leave to cool completely.
Beat egg whites with salt and sugar until peaks form.
Place crumb on the bottom of the glass, pour cream on top and finish with meringue. Torch meringue until brown.
