1. Easy madeleine recipe with chocolate chips
INGREDIENTS
• 125g butter
• 125g sugar
• 150g flour
• 1 tsp baking powder
• 2 large eggs
• 2 tbsp milk
• 5-6 drops almond flavor
• 1 pinch of salt
• 1 lemon zest
• 50g chocolate chips
METHOD

METHOD
- Melt the butter in a saucepan and let it cool slightly.
- Beat the eggs with sugar until the mixture is light and fluffy. till stirring, add the flour with baking powder, stir.
- Add butter, milk, almond flavor and grated lemon zest. Cover with plastic wrap and chill for 3 hours.
- Grease the baking form. Add the dough into the mold. Add chocolate chips to the remaining dough and refrigerate.
- Bake at 220°C/430°F for 4 minutes, lower to 180°C/350°F and continue bake for another 5-6 minutes, until the shells become golden.
- Remove from the oven, immediately remove from the mold and let it cool.
- Fill the dough with chocolate drops and bake again.
2. Homemade baguette
INGREDIENTS
700 g (24.5 oz) flour;
½ tsp dry yeast;
1 ½ tsp salt;
520 g (17.5 fl.oz) warm water.

METHOD
- Mix flour, yeast and salt together. Add warm water and knead the dough until it comes together.
- Cover the dough with plastic and set aside for 45 minutes.
- Use some olive or vegetable oil to grease your hands. Sprinkle working surface with some flour and transfer soft dough onto it.
- Knead the dough for 2-3 minutes and place into oiled pan. Cover with plastic and set aside for 45 minutes.
- Repeat kneading and proofing the dough two more times.
- Separate the dough into 4 pieces on a floured surface. Roll each portion into baguette shape and transfer on a tea towel. Cover with plastic loosely and let it rest for 20 minutes.
- Carefully transfer on a parchment covered baking sheet, make 3-4 slits on the surface using a sharp knife or blade, then bake at 200C/400F for 15 minutes.
3. Chocolate french toast
INGREDIENT
2 thick (4 cm/1 Ω-icnh) slices white toast bread;
1 bar dark chocolate;
2 eggs;
Ω cup cream liqueur;
1 tsp cinnamon;
1 tbsp sugar;
º tsp salt;
ice-cream, fruits for serving.

METHOD
- Make a pocket in each bread slice without cutting through. Place half a bar of chocolate into each bread pocket.
- Whisk eggs with liqueur, cinnamon, sugar and salt. Pour the mixture over stuffed bread and leave to soak for 15-20 minutes.
- Melt some butter (or heat vegetable oil) over medium heat. Cook each toast for about 3-4 minutes on each side or until golden brown and cooked through.
- Slice toasts in half before serving. Serve with fruits and ice-cream.
4. Galette des Rois with custard
Galette des Rois is a French pastry that celebrates the holiday of the Epiphany, to celebrate the arrival of the Three Kings. It’s a simple cake, beautiful and filled with an almond cream. We chose to fill it with custard and black cherries. Here is what you need to make this dessert: 2 sheets of puff pastry, 10 black cherries in syrup, custard. For the custard: 400ml milk, 100ml whipping cream, 150g sugar, 35g flour, 5 egg yolks and lemon peel. Beat the yolks with the sugar, add the flour. Warm the milk and the whipping cream and let it infuse with the lemon peel. Remove the lemon peel and add the egg mixture when the milk starts boiling. Stir vigorously until the cream is formed. Let it cool. Once cooled spread the cream on a sheet of puff pastry, add the cherries and cover with the other sheet of puff pastry. Brush with egg wash (yolk) and decorate as you prefer.
