Peaches roll: light, creamy and beautiful!

Looking for something new to try with those fresh peaches? This is it! This cream peaches roll is perfection on a plate!

INGREDIENTS

16 Lady finger biscuits
200ml Peach juice
750g Ricotta cheese
120g Condensed milk
40g shredded coconut
6g Gelatin
400g Peaches in syrup
10 leaves Mint
 
METHOD
Cover with plastic wrap a form for bread.
Then soak the cookies in the juice and place them against each other so that they form V.
Pour the cheese into a large bowl, add condensed milk and start to beat.
Then add gelatin and, finally, coconut and beat for about 2 minutes. Then put 3 tablespoons of cream in a star-shaped pastry bag for the final design. Assemble like in the video
At this point, close all the cookies inside and cover with foil. Cool overnight. The next day, turn the peach roll over a dish, carefully remove the film, decorate with cream and peaches, cut into small pieces, and mint leaves.
