You've never tasted such a good peach pie, make it in just a few steps!

INGREDIENTS
For shortcrust pastry:
320g (2 3/4 cups) of all-purpose flour
130g (3/4 cup) of sugar
4g (1/4 tbsp) of baking powder
160g (3/4 cup) of butter
1 egg
1 egg yolk
3 peaches
1/2 of lemon juice
Peach jam
Sugar
METHOD
1. Mix the flour, sugar, and baking powder in a mixing bowl. Add the butter and mix with the fingers. Add the egg and egg yolk and knead it until the compact dough formed. Transfer to the fridge for 30 minutes.
2. Slice the peaches and transfer them to the bowl. Pour the lemon juice over them and set them aside.
3. After time has elapsed transfer the dough to the working surface and roll it out.
4. With the help of the rolling pin transfer the rolled dough to the cake mold. Press with the fingers on the side to remove the excess of the dough.
5. Prick the dough with the fork and spread a couple of spoons of the peach jam. Arrange the peach slices on the top to cover the whole surface.
6. Sprinkle the pie with the sugar and transfer it to the oven. Bake at 180°C/360°F for 35 minutes.
7. Let the pie cool completely after baking, cut a slice and serve.
