Gulab jamun: an authentic Indian sweet!

INGREDIENTS
150 g (5 oz) mawa;
¼ tsp baking powder;
½ cup flour;
2 cups sugar;
2 cups water;
4 cardamom pods;
1 tbsp lemon juice;
vegetable oil for frying.

METHOD
Grate mawa on a small grater. Combine with flour and baking powder. Add water and knead to make a smooth dough.
Place water, sugar, lemon juice and cardamom pods over medium heat and boil. Set aside to cool down until warm.
Divide the dough in 10 parts, roll each into a ball and fry in preheat oil for 5-6 minutes, until deep golden brown on the outside.
Cover fresh gulab jamun with syrup and set aside for 4 hours. Remove and serve, adding some syrup and topping with nuts if desired.
