Queso chips

INGREDIENTS
2 tbsp unsalted butter
½ medium white onion, diced
2 jalapeñoes, diced
2 cloves garlic, minced
1 tbsp cornstarch
12 oz evaporated milk
3 cups shredded sharp cheddar cheese
1 cup flour
2 large eggs, beaten
3 cups tortilla chips, crushed
4 cups canola oil
2 tbsp unsalted butter

3 cups shredded sharp cheddar cheese
1 cup flour
2 large eggs, beaten
3 cups tortilla chips, crushed
4 cups canola oil
METHOD
Melt butter in a saucepan. Add the onion and cook for 4-6 minutes.
Add the jalapeño and stir for 4 minutes. Add the garlic and cook for 1 min.
Add the cornstarch and stir for 2 minutes. Add the evaporated milk and stir until the mixture thickens.
Slowly add the cheese and stir until it completely melted.
Line a baking sheet with parchment paper, pour the queso over it.
Freeze for 3 hours.
Cut it into small triangles.
Toss a triangle of queso in the flour, then dip in the egg, then toss it in the tortilla chip crumbs.
Fry the queso chips until golden brown.
