3 salmon recipes for a healthy and delicious dinner!

1) Puff pastry-wrapped salmon
INGREDIENTS
300g salmon fillet
one sheet of puff pastry
150g mozzarella
thyme
salt

METHOD
- Salmon baked in puff pastry, although quick and easy to prepare, is a surprising dish. All you have to do is place a cleaned boneless salmon fillet onto some puff pastry.
- Add mozzarella or any cheese you prefer, and flavor with some salt and thyme, or rosemary.
- Braid the puff pastry around the salmon and bake at 190°C for 20 minutes. A lovely dinner ready in no time.

2) Spinach and ricotta salmon
INGREDIENTS
200g spinach
200g ricotta
crescenza cheese
salt
pepper
lemon zest
salmon fillets
lemon juice
olive oil
METHOD
1. To make the filling, combine the spinach and ricotta, add some crescenza cheese and seasoning.
2. Clean the salmon fillets and make a cut in the center.
3. Fill them with the ricotta and spinach mixture and cook them in a pan with a bit of olive oil, butter, and lemon juice.

METHOD
1. Thinly slice the salmon fillet.
2. Fill them with ricotta cheese and baby spinach.
3. Roll them up and bake at 180°C for 15 minutes.
4. Season with pepper, add some basil and serve.

METHOD
1. Cut the pizza dough into triangles and fill them with ricotta mixed with the baby spinach.
2. Lay some salmon slices on either side of the triangle and roll each triangle up.
3. Brush the tops of the croissants with egg wash and bake at 180°for 20 minutes.
