1. Tortilla cake
INGREDIENTS
• 16 tortillas
• 6 chicken breasts
• 400ml tomato sauce
• 4 tbsp fajita seasoning
• 3 mixed peppers, chopped
• 24 slices mozzarella
• 2 cups cheddar cheese
• sour cream
METHOD
1. Put chicken, peppers, seasonings and tomatoes in a large baking sheet. Mix well. Cover lightly with foil and bake for 2 hours at 150°C/300°F. Let cool a little.
2. Put 3 sheets of mozzarella between 2 tortillas. Repeat with all the tortillas. Put them in a large pan. Sprinkle the cheese in half and then lay the whole chicken on top. Add the remaining cheese. Fold all the tortillas.
3. Bake for 25 minutes at 200°C/400°F.

2. Crispy tortilla bowls
INGREDIENTS
Tortilla:
• ⅓ cup flour
• ¼ tsp salt
• 3 tbsp Greek yogurt
• oil spray
Salad:
• 1 Chicken Breast
• 1 avocado
• 1 cup cherry, halved
• salt
• black pepper
• ¼ cup olive oil
• ½ tsp Worcestershire sauce
• 1 ½ tbsp lemon juice
• ½ tsp garlic, minced
• 1 ½ tsp mustard
• 1 tbsp grated Parmesan cheese
• 2 tbsp Greek yogurt
• 2 cups romaine lettuce
• ½ cup crouton
METHOD

METHOD
- In a medium bowl, mix flour, salt and yogurt. Knead the dough with your hands until a ball forms.
- Roll up the circle, as thin as a sheet of paper.
- Brush the bowl generously with a non-stick spray, then spray one side of the dough. Carefully place the dough with the greased side down on the bowl. Grease the inside of another bowl, then spray the open side of the dough. Cover with a second bowl.
- Bake for 25 minutes at 425˚F/220˚C.
- Prepare a salad: fill the chicken breast on both sides with salt and pepper.
- Heat 1 tablespoon of olive oil in a medium frying pan over medium heat. Fry chicken until deep golden brown, about 6 minutes on each side. Remove the chicken from the pan.
- In a medium bowl, beat the Worcestershire sauce, lemon juice, garlic, mustard, parmesan and salt to taste. Add 3 tablespoons of olive oil, whipping constantly. Add yogurt and mix until smooth. Season with pepper.
- Thinly chop the chicken
- Fill a bowl of tortilla with romen, and then add cherry tomatoes, avocado, sliced chicken, croutons, dressing and Parmesan cheese on top.
3. Shrimp quesadilla
INGREDIENTS
1 lb shrimp peeled and deveined
1 tbsp olive oil
1/2 cup onion chopped
1/2 cup bell pepper chopped
2 cloves garlic minced
2 tbsp taco seasoning
1-2 cups cheese mozzarella
6-8 Medium flour tortillas
METHOD

METHOD
- Heat oil in a large pan.
- Add the onion, bell pepper, and garlic. Cook for 1 minute.
- Add the shrimp and taco seasoning, cook for 1-2 minutes. Set aside.
- Return the pan to the heat and grease with cooking spray.
- Add tortilla in the pan and sprinkle cheese on the one side. Add about 5-6 shrimp and more cheese. Fold tortilla in half.
- Cook for 2-3 minutes on each side.
4. Cheesy Bacon and Potato Omelet with tortillas inside
INGREDIENTS
Olive oil
2 cups diced potatoes
6 eggs
18 strips of bacon
6 slices of cheddar cheese
3 tortillas
Chopped fresh parsley
Bacon bits
METHOD

METHOD
- Fry potatoes until golden brown, divide in half and put 1 half into a bowl.
- In a medium bowl, beat eggs.
- Put bacon on a baking sheet and bake 190°C/375°F for 10 minutes
- Pour half of the eggs into the pan, put the tortilla, 6 slices of bacon and 2 slices of cheese, repeat 2 more times.
- Press with your hand, add the remaining fried potatoes to the bowl with eggs, mix and pour into the pan
- Cover and cook for 15 minutes.
- Flip and fry for another 5 minutes
- Sprinkle with chopped bacon and parsley
