Rainbow pizza: the best veggie pizza of all times!

INGREDIENTS
For the crust:
1 kg (2 pounds) cauliflower;
¼ cup parmesan cheese;
¼ cup mozzarella, shredded;
1 egg;
½ tsp garlic powder;
½ tsp Italian herbs;
salt and pepper.

For the topping:
½ cup marinara sauce;
1 cup mozzarella, shredded;
colorful vegetables of choice (tomatoes, peppers, broccoli, corn etc.).

METHOD
Preheat oven to 220C/430F. Line the bottom of the pan with parchment and brush with some olive oil.
Shred or blend cauliflower florets and microwave them for 5 minutes. Let cool down, then use kitchen towel to squeeze excess moisture as much as possible.
Combine cauliflower with egg, cheeses and spices. Mix well and spread in prepared baking sheet evenly.
Bake for 15 minutes, meanwhile prepare your toppings.
Cover cauliflower base with sauce and cheese, then top with vegetables of your choice, forming colorful strips across pizza base.
Bake for 15 minutes more and serve right away.
