Secret Christmas Tree Cake

Ingredients:400g Flour
200g Brown Sugar
150ml Olive Oil.
1 Orange: Juice Only
1/8th Tsp Essence of Rum.
400ml Almond Milk.
1 Tablespoon and 2 Teaspoons of Baking Powder.
1 Tsp Green Food Colouring.
100g Melted White Chocolate.
Desiccated Coconut
Instructions:
Mix together the brown sugar and the flour.
Pour in the Olive oil, Orange Juice and Essence of Rum and stir.
Now add the Almond Milk a little at a time to form a batter.
Remove one third of this batter and to this third add 2 Teaspoons of baking powder and 1 Tsp green food colouring.
Line a 35cm by 25cm baking tray and pour in the green batter and bake at 180°C or 350F for 15 minutes.Allow too cool and then cut out Christmas tree shapes using a cookie cutter. Make sure these trees fit in a 1kg loaf tin.
Add an extra tablespoon of baking powder to the remaining cake mix.
Coat a 1kg loaf tin with baking spray then pour in a little of the mixture to around 1-1.5cm deep in the base and then stand in the Christmas trees.
Freeze the for 10 minutes just to help keep the trees in place then spoon over the remaining mix.
Bake in the oven at 180°C or 350F for 40 minutes.
Allow to cool then cover with melted white chocolate and desiccated coconut.
