- MEAT AND EGGS BASKET
Ingredients
1/3 lb ground sausage
salt
pepper
¼ tsp garlic powder
¼ tsp onion powder
¼ tsp paprika
¼ tsp dried parsley
4 eggs

Preparation
Mix sausage with all spices in a bowl until well combined.
Grease a muffin tin and divide meat between muffin cups. Cover the sides and leave hole in the middle for the eggs.
In a separate bowl, beat the eggs, salt, and pepper.
Pour egg mixture into each cup.
Top with shredded cheese, tomatoes and parsley.
Bake at 350°F/180°C for 30 minutes.

- POTATO BASKETS
INGREDIENTS

DIRECTIONS
1. Boil the potatoes, mash them and then add the egg, salt, pepper and Parmesan cheese to them.
2. Use a muffin pan to make the baskets. If you don’t have a muffin pan, use some parchment paper instead. With the potato mixture, make a circle then make two rings (one on top of the other) on top of the circle to make the sides of the basket.
3. Bake the baskets at 190°C for 15 minutes. Wait until they have cooled a bit before filling them with mozzarella cheese, sautéed mushrooms and a sprinkle of Parmesan cheese.
4. Bake them for an additional 8 minutes and serve hot!

4 tbsp olive oil;
a pinch of salt and pepper;
4 slices prosciutto, chopped;
store-bought pizza dough;
dried oregano, fresh basil for garnish.

Instructions
Preheat your oven to 180C (350F). Cover baking pan with parchment or foil.
Cut the top of the tomato off and scoop all the insides using a spoon.
Blend cheese and olive oil until smooth paste forms. Season with salt and pepper to taste.
Fil each tomato cup with prosciutto, top with blended cheese.
Roll out the pizza dough and cut it into circles to fit tomatoes. Wrap tomatoes in pizza dough and place onto a prepared baking pan.
Bake for 20-25 minutes or until the dough is fully cooked and golden brown. Garnish with oregano and basil leaves before serving.

Cover a ramekin with long slices of pancetta, carefully pour an egg into the pancetta basket. Season with salt and pepper. Bake for about 20 minutes, or until the pancetta is crispy and the egg is cooked, and serve hot!
