Lemon sorbet: beautiful and fresh!

How to make a delicious sorbet in no-time

INGREDIENTS
8 whole lemons
lemon zest
160ml (2/3 cup) fresh lemon juice
200g (1 cup) sugar
700ml (1 cup + 2 cups) water
2 tbsp cornstarch
2 tsp lemon extract
15ml vodka
 
METHOD
  1. Cut a sliver off of the bottoms of each lemon so that they can stand upright.
  2. Cut off the inside of each lemon and squeeze it.
  3. In a pot add zest, sugar, and 1 cup of water, reduce for 10 minutes on medium heat. Remove zest from the pot and add in lemon juice, lemon extract, 2 cups of water, and cornstarch, simmer for 10 minutes. Let it cool and add vodka.
  4. Freeze for 6 hours.
  5. Scoop into lemon cups and serve with mint leaves.
