INGREDIENTS
300g (2 1/2 cups) of all-purpose flour
1 tsp of dry yeast
120ml (1/2 cup) of water
90ml (1/2 cup) of extra virgin olive oil
1/2 tsp of salt
1/2 tsp of turmeric
Oil + water for brushing
Salt
METHOD
1. In a bowl sift the flour, add the dry yeast, and water, and mix with the wooden spoon. Add the olive oil, salt, and turmeric and mix.
2. When the dough starts to form knead it with your hands until smooth. Cover with cling film and let it rise for 2 hours, or until it double in volume.
3. After the rising time, roll out the dough with a rolling pin to 2 mm thick. Make vertical stripes with a pizza cutter and cut them horizontally in order to obtain many rectangles of the same size, taking care to even the edges.
4. With a dough wheel, cut each rectangle of dough in half being careful not to cut the pastry. Helping you with a toothpick make small holes in each cracker.
5. Transfer the crackers to the baking tray covered with parchment paper and brush with the mix of oil and water. Sprinkle each cracker with salt and bake in the oven at 190°C/375°F for 12 minutes.
6. Let the crackers cool after baking and serve.
