3 best mini pizza appetizers recipes: kids would love them!

1) Eggplant mini pizzas
INGREDIENTS
1 eggplant
salt
oil, as needed

100g tomato puree
50g Parmesan cheese
mozzarella cheese
50g Parmesan cheese
mozzarella cheese
METHOD
- Slice the eggplants into 1.5 cm slices.
- Place them onto a baking sheet, make some cuts over the top of each eggplant slice, season with salt and oil and bake them at 180°C for 20 minutes.
- Remove them from the oven and spread some tomato puree over each slice, add some oregano, salt, Parmesan and mozzarella cheese.
- Bake them for 10 more minutes and serve them hot topped with a basil leaf.

2) Potato mini-pizzas
INGREDIENTS
potatoes
cheese
rosemary
mortadella
olive oil
METHOD
1. Slice the potatoes into thick slices. Season with salt, pepper, rosemary and olive oil.
2. Bake at 180°C for 20 minutes.
3. Fill with cheese and mortadella.
4. Bake at 200°C for 5 minutes.

2. Bake at 180°C for 20 minutes.
3. Fill with cheese and mortadella.
4. Bake at 200°C for 5 minutes.

METHOD
1. Cut the eggplant into thick slices, season them with salt and bake at 180°C for 15 minutes.
2. Drizzle with olive oil, add the cherry tomatoes and provola cheese.
3. Bake at 180°C for 10 minutes.
4. Serve hot!
