1) Mashed potato Christmas trees
INGREDIENTS
3 potatoes
60g pesto
50 Parmesan cheese
1 egg yolk

METHOD
1. Microwave or boil the potatoes.
2. Mash the potatoes, add the egg yolk, pesto, and Parmesan cheese.
3. Using a pastry bag, make some trees on a sheet of parchment paper. Bake at 190°C for 15 minutes.
4. Let the potatoes cool and serve with a cheese star on top.

2) Puff pastry Christmas trees

METHOD
- These puff pastry Christmas trees are easy to make, and the result is really great.
- You can fill them in any way you like, we decided to use pesto and mortadella, but you can use salami or ham.
- You can make 10/11 trees with one sheet of puff pastry.

INGREDIENTS
white sandwich bread (about 6 slices)
pesto, as needed
300g smoked salmon

METHOD
1. Remove the crust from the sandwich bread. Flatten the slices of bread and cover them with pesto and smoked salmon.
2. Roll it up and refrigerate for at least 30 minutes. Slice each roll-up into 4 servings.
3. Place the roll-ups in the shape of a Christmas tree and top it with a star cut out from a piece of cheese.
