INGREDIENTS

For the pastry:

300g of all-purpose flour

100g of soft butter

150g of sugar

1 egg

1 egg yolk

Grated zest of one lemon

For the filling:

400g of cooked and peeled chestnuts

50g of brown sugar

170ml of milk

150g of chopped dark chocolate

70g of ricotta cheese

METHOD

1. Mix the soft butter with the sugar in a large bowl until you get a creamy mixture.

2. Add the egg and the yolk, and mix again until fully absorbed.

3. Add the grated lemon zest.

4. Add the flour and mix until you get a workable dough.

5. Continue kneading on a work surface with a handful of flour.

6. Form a dough ball, wrap it in plastic wrap, and let it rest in the fridge for at least 30 minutes.

7. Finely chop the chestnuts using a mixer.

8. Put them in a saucepan with the sugar and milk.

9. Bring to a boil, stirring continuously.

10. Add the previously chopped chocolate, and add the ricotta when it is melted and incorporated. Let it cool slightly.

11. Take the dough ball and roll it out using flour and a rolling pin to about half a centimeter in thickness.

12. Place the dough in a previously buttered and floured tart pan, trimming the excess edges with a knife.

13. Place the now warm filling inside the pastry shell.

14. Take the remaining pastry, and roll it out to a thickness of about half a centimeter.

15. Place the dough over the tart, pressing the edges with the rolling pin. Trim the excess edges with a knife.

16. Bake at 180°C (356°F) for about 40 minutes.
