Breakfast Brulee

Ingredients:
2 Cups Berries: Use what you like, I have used Raspberries, Strawberries and Blueberries.
50ml Water.
2 Tbsp Sugar.
2 Tsp Lemon Juice.
500g Greek Yoghurt.
1 Tsp Vanilla Extract.
4 Tbsp Granola.
8 Tbsp Sugar for Brulee
 
Instructions:
Place the berries in a pan with the water and cook for 2-3 minutes until lightly softened.
Remove from the heat and add in the sugar and lemon juice then allow to cool.
Mix together the Greek Yoghurt and the vanilla extract and set aside.
Take 4 ramekins and add the cooled berries in the bottom.
Then followed by a tablespoon of granola over the berries.
Now top off with the yoghurt and flatten with a palate knife.
Sprinkle over  two tablespoons of sugar over each ramekin dish and then using a blow torch caramalise the sugar.
Allow to cool for 5 minutes before serving
