INGREDIENTS
3 pears
750g water
200g of sugar
vanilla
zest of 1 lemon
star anise
2 cinnamon sticks
For the filling:
40g chopped walnuts
20g honey
cinnamon
Zest of orange
METHOD
3 pears
750g water
200g of sugar
vanilla
zest of 1 lemon
star anise
2 cinnamon sticks
For the filling:
40g chopped walnuts
20g honey
cinnamon
Zest of orange
METHOD
1. Prepare a spiced syrup by adding water, sugar, vanilla, lemon zest, cinnamon, and star anise to a pot. Bring to a boil.
2. Peel the pears, cut them in half, remove the cores, and place them in the boiling syrup. Cook for 10-15 minutes (depending on the initial firmness of the fruit). Test with a toothpick; if it goes in and out easily, the pears are done.
3. Carefully remove the pears and let them drain on paper towels.
4. Prepare a fine mixture of walnuts, honey, and grated orange zest, then fill the pears.
5. Cut the puff pastry into 6 rectangles and place a pear in the center of each. Make a light cut around the shape of the pear and brush with the syrup. If desired, add some sugar to make them even crunchier.
6. Bake at 180°C (350°F) for about 25 minutes, until cooked and golden brown.
7. Add a mint leaf and serve with a light dusting of powdered sugar.
