Floral weave for shortcrust pastry: how to make an original and beautiful tart

INGREDIENTS
(24cm mold)
For the shortcrust pastry:
120g of sugar
120g of butter
1 egg + 1 egg yolk
330g of flour "00"
4g of baking powder
q.b. yellow food coloring
q.b. green food coloring
q.b. orange food coloring
q.b. blue food coloring
q.b. red food coloring
METHOD
1. Work the butter with the flour until it has a sanded effect.
2. Add sugar, flour and finally egg, work quickly and let it rest in the fridge for at least 30 minutes.
3. Spread the shortcrust pastry between two sheets of parchment paper and leave aside the small pieces that you will color with the help of food coloring.
4. Shape the balls and place them on the sheet of shortcrust pastry and arrange them so as to form small flowers, as you see in the video and proceed by filling the whole sheet.
5. Cover with parchment paper and press over the rolling pin.
6. With the help of a wheel or a small knife, cut the shortcrust pastry into strips.
7. Place them on the tart starting from the center and alternating each time the verse.
8. Bake at 175°C/347°F for about 30 minutes.
