Soft cookies with cherry jam: the most unique cookies ever

INGREDIENTS
2 eggs
80g (1/2 cup) of sugar
10g (3/4 tbsp) of vanilla sugar
A pinch of salt
110ml (½ cup) of vegetable oil
20g (1/4 cup) of cornstarch
250g (2 cups) of flour
8g (1/2 tbsp) of baking powder
110g of cherry jam
10g (1 tbsp) of powdered sugar
METHOD
1. In a bowl add the eggs, sugar, vanilla sugar, and salt and whisk. Add cornstarch, flour, and baking powder and mix with a spatula to combine.
2. Take the mixture with the help of a spoon and obtain the discs (about 12 discs). Transfer them to the baking tray covered with parchment paper.
3. Make the holes on the discs (5 on each one) and transfer them to the oven. Bake at 180°C/360°F for 20 minutes.
4. In a pan add the cherry jam and powdered sugar and mix for a few minutes to combine. Remove from the heat.
5. When the cookies are done fill the holes with the prepared jam.
6. Serve them all together on a serving dish.
