Mojito cheesecake: fresh and easy to prepare!

INGREDIENTS
For the base:
200g of dry biscuits
30g (1/4 cup) of light brown sugar
100g (1/2 cup) of butter (melted)
20ml (1 tbsp) of rum
For the cream:
210ml (1 cup) of liquid cream
520g (2 1/4 cups) cream cheese
110g (1/2 cup) sugar
40ml (2 tbsp) rum
1 lime (zest)
1 lime (juice)
Fresh mint
METHOD
1. Add the dry biscuits to the food processor and mix them until crumbly. Add the sugar, butter, and rum and continue with mixing to combine.
2. Pour the biscuit base into the cake mold (24cm - mold size) and level it up will the help of the spoon covering well the bottom part. Transfer to the fridge for 1 hour.
3. In a bowl add the liquid cream and mix with the electric mixer. Add the cream cheese, sugar, rum, lime (zest), lime (juice), and fresh mint and mix to combine.
4. After time has elapsed remove the cake base from the fridge and pour the cream over. Level it up well with a spatula and transfer it to the fridge for at least 3 hours.
5. After time has elapsed remove the cake from the fridge and decorate with lime slices, lime zest, and mint. Cut on slices and serve.
