Mediterranean cous cous: fresh and light for a yummy lunch

INGREDIENTS
350g (1 3/4 cups) of couscous
Salt
Turmeric
Pepper
Extra virgin olive oil
350ml (1 1/4 cups) of water
1/2 of red bell pepper
9 cherry tomatoes
100g of green olives
250g (1 1/4 cups) of boiled chickpeas
250g of tuna in oil
150g of cheese
Basil
METHOD
1. Add the couscous into the bowl and season with salt, pepper, tumeric and olive oil. Pour the water and cover with cling film or cloth. Set aside for 15 minutes to couscous absorb the water.
2. Cut the red pepper, cherry tomatoes and green olive into pieces and set aside.
3. After time has elapsed mix the prepared couscous and add the boiled chickpeas, tuna in oil, red pepper, cherry tomatoes, green olives, cheese and mix to combine.
4. Finally add the basil and pour a drizzle of olive oil and mix to combine. Serve on plate and enjoy.
