Galette des Rois: the French cake perfect for Epiphany!

INGREDIENTS

2 rolls puff pastry

For the cream

60g (4tbsp) almond flour

60g (6 tbsp) powdered sugar

60g (3tbsp) butter

25g (2 tbsp) flour 00

1 egg

For the custard

260ml (1 cup) milk

2 medium egg yolks

30g (2 tbsp) flour

70g (4 tbsp) granulated sugar

4g (1 tsp) vanilla

METHOD

In a mixing bowl, pour butter, powdered sugar. Mix well. Add egg. Mix. Add almond flour and wheat flour. Whisk well.
In another mixing bowl, pour two egg yolks, vanilla, sugar. Mix. Add flour. Mix. Pour the resulting mixture into the warmed milk. Stir until combined and simmering. Mix both mixtures. Pour the resulting mixture into the puff pastry.
Fold and shape into a cake with another puff pastry. Coat with egg yolk with a little milk and bake at 360°F/180°C for 25 minutes. Serve.
