Tortilla Samosas

INGREDIENTS:

Oil

Tortillas

1 White onion

1 cup mixed peppers

2 cloves of garlic

3 cups shredded cooked chicken

Fajitas spices

1 cup tomato passata

Flour

Water

Wooden stick

Pesto

METHOD:

1.Add oil, onion, peppers and garlic to a hot pan and mix.

2.Add shredded chicken, fajitas spices and crushed tomatoes.

3.Cut a tortilla in half, and with a mixture of flour and water forms a triangle with it and filled with the chicken and vegetable mixture.

4.Use the flour and water mixture again to close the triangle.

5.Place several samosas on a baking tray and brush with oil.

6.Bake for 20 minutes at 180ºC.

7.Place 2 triangles on a wooden stick and brush with pesto and serve.

Cheese tortillas

INGREDIENTS:
1/2 cup onion, chopped
1 tbsp garlic, minced
1 lb ground beef
1 tsp paprika
1 tsp chili powder
1/2 tsp cumin
salt and pepper
4 flour tortillas
1 cup queso
1 cup cheddar cheese

METHOD:
1.Heat the olive oil in the skillet. Add onion, garlic, beef and cook for 5 minutes.
2.Drain it, and add all seasoning. Cook for 2-3 minutes.
3.Spread 1-2 tbsp of queso and put 2-3 tbsp beef mixture on the top. 4.Sprinkle with cheddar cheese and fry on the skillet for 3-4 minutes.
