KÄSEKUCHEN: the recipe for the CREAMY cheesecake with a UNIQUE taste!🤩

INGREDIENTS (for a 20cm baking pan)
For the crust:
170g (1 2/5 cups) flour
80g (1/3 cup) butter
50g (1/4 cup) sugar
1 egg
1/3 tsp salt
For the filling:
600g quark cheese
250g (1 1/4 cups) sugar
4 eggs
40g vanilla custard powder
5 tbsp lemon juice
1 tsp lemon zest
200ml (4/5 cup) cream
Powdered sugar
METHOD
1. Mix the flour with the sugar, butter, egg, and salt in a bowl, and mix everything with a fork to blend the ingredients well.
2. When the dough starts to form, work it with your hands until you get a smooth and compact dough ball. Transfer it to the fridge for 30 minutes.
3. In the meantime, whip the cream using electric beaters and set aside.
4. In another bowl, mix the quark cheese with the eggs, sugar, instant vanilla custard, lemon juice, and zest. Mix with the beaters to get a nice smooth mixture.
5. At this point, gradually add the whipped cream and gently fold it in with a spatula.
6. Now you can assemble the cheesecake: Line the bottom of a 20cm diameter cake pan with parchment paper and then butter it.
7. Remove the shortcrust pastry from the fridge and press it into the pan, making sure it fits well on the inner edges too.
8. Pour the cream mixture in and bake at 160°C for 1 hour.
9. When you see the cheesecake nicely golden, it's ready. Take it out of the oven and let it cool before removing it from the pan.
10. You can leave it in the fridge overnight before serving. But remember to decorate it with powdered sugar to make it even more delicious.
