APPLE PIE: VERY DELICIOUS and ready in A FEW MINUTES! ππ

INGREDIENTS
For the shortcrust pastry:
300g (2 2/5 cups) of all-purpose flour
100g (2/5 cup) of soft butter
150g (3/4 cup) of sugar
1 egg
1 egg yolk
1 lemon (zest)

For the filling:
2 eggs
2 yolks
1 lemon (zest)
2 tbsp of all-purpose flour
100g (1/2 cup) of sugar
100g (2/5 cup) of fresh cream
150g (3/5 cup) of milk
2-3 apples

24cm cake pan

METHOD
1. Start preparing the shortcrust pastry: Mix the soft butter and sugar in a large bowl, you should obtain a cream.
2. Add the egg and the yolk, mix again until completely absorbed.
3. Also add the grated lemon zest.
4. Add the flour, mix until you obtain a workable dough.
5. Continue kneading the dough on the work surface, helping yourself with a handful of flour.
6. Form a loaf, wrap it in cling film and let it rest in the fridge for at least 30 minutes.
7. Now prepare the filling: Pour the eggs, egg yolks and grated lemon zest into a large bowl, mix the ingredients with a hand whisk until you get a well-mixed mixture
8. Add the sifted flour and sugar, mix again until you get a mixture without lumps.
9. Add the cream in 2 times, always mixing with the whisk.
10. Finally add the milk, mix until you get a smooth liquid.
11. Take the loaf and roll it out using flour and a rolling pin, you will need to obtain a thickness of about half a centimetre.
12. Place the dough in a previously buttered and floured tart mould, remove the excess edges using a knife.
13. Cut the apples into slices using a cutting board and knife, arrange them radially in the shortcrust pastry shell.
14. Pour the cream distributing it over the entire filling.
15. Bake at 180Β°c for about 45 minutes.
