Ricotta and basil fritters: VERY SOFT, to be made in a pan! ๐คค

INGREDIENTS
260g (1 cup) of ricotta
2 eggs
40g (1/2 cup) of parmesan
10g (3/4 tbsp) of baking powder
Salt
90g (3/4 cup) of flour
Basil
Olive oil
METHOD
1. In a bowl add the ricotta, eggs, parmesan, baking powder, salt, and flour and mix with an electric mixer to combine. Add the basil and incorporate it with a spatula.
2. Take the mixture with the spoon and transfer to the pan with olive oil. Cover with the lid and cook for 5 minutes.
3. After 5 minutes flip the ricotta fritters on other side and let them cook for 5 more minutes.
4. Serve ricotta fritters all together on a serving dish and enjoy.
