Salmon au gratin with pistachios: a quick dish full of flavour!

INGREDIENTS
For vegetables pan:
2 potatoes
2 tomatoes
Pepper
Salt
Olive oil
Thyme

For pistachios:
30g of bread
Parsley
20g of pistachios
Pepper
Olive oil

For salmon pan:
Olive oil
2 salmon fillets
Pepper
Salt

METHOD
1. Cut the potatoes and tomatoes into pieces and arrange in the pan. Season with salt and pepper and add a drizzle of olive oil. Add thyme and transfer to the oven. Bake at 180°C/360°F for 20 minutes.
2. In a food processor add the bread, parsley, pistachios, pepper, and olive oil and mix.
3. Add a drizzle of olive oil to the pan covered with parchment paper and arrange salmon fillets. Add a few spoons of prepared pistachios on top to cover the fillets.
4. Add a drizzle of olive oil on the fillets transfer the fillets to the oven and bake at 180°C/360°F for 15 minutes.
5. Serve the salmon fillet with prepared vegetables on a serving plate.
