Eggplant pancakes: the recipe to make them extra tasty in the oven

Ingredients:
- For the batter:
1 red onion
Olive oil
1 garlic clove
1 carrot
1 eggplant
Salt and pepper
2 eggs
Half a cup of kefir or yogurt
200 g of flour
Ham
Parsley
Paprika
- For the sauce:
3 tbsp of yogurt
5 cherry tomatoes
Salt, pepper, paprika
1 garlic clove
Directions:
1. Fry the onion in a pan with oil for 2 minutes.
2. Then add garlic, grated carrot and diced eggplant.
3. Season with salt and pepper and let cook for 2 minutes.
4. Mix yogurt and eggs in a bowl, then stir in flour and oil.
5. Now add diced ham and vegetables from the pan.
6. Shape the pancakes onto a greased baking paper sheet.
7. Bake at 180° for 20 minutes.
8. Serve with a sauce made with yogurt, chopped tomatoes, salt, pepper, paprika and garlic.
