Stuffed potato focaccias: stringy and super delicious!

INGREDIENTS
600g of potatoes
Salt
80g (1 cup) of parmesan
14ml (1 tbsp) of extra virgin olive oil
Pepper
190g (1 1/2 cups) of all-purpose flour
Ham
Cheese
METHOD
1. Peel and cut the potatoes and transfer them to the pot with water. Boil for 30 minutes and then remove from the heat. Drain and transfer the potatoes to the bowl.
2. Mash the potatoes and then add the salt, parmesan, extra virgin olive oil, pepper, and flour and mix. When the dough starts to form knead it with your hands to obtain compact dough.
3. Transfer the mixture to the working surface and roll it out. Make the circles with the mold.
4. Place the circles on the cutting board and add the piece of ham and cheese to each circle. Cover each circle with one more and seal the edges well.
5. Pour the olive oil into the pan and fry the potato focaccias on both sides until they are golden brown.
6. Serve them all together on a serving plate and enjoy.
