Savory cauliflower pie: stringy and tasty!

INGREDIENTS
1.4kg of cauliflower
200g of sausage
2 eggs
100g (3/4 cup) of cornstarch
90g (1 cup) of parmesan
Parsley
Salt
Pepper
Extra virgin olive oil
Breadcrumbs
120g of cheese
120g of mozzarella
Parmesan
METHOD
1. Add the cauliflower pieces to the pot with boiling water and boil for 10 minutes. Remove from the heat and transfer to the bowl.
2. In a pan add the sausage and fry for a few minutes. Remove from heat.
3. Mash the cauliflower with the fork and add the eggs, cornstarch, parmesan, parsley, salt, and pepper and mix to combine.
4. Pour the olive oil and add breadcrumbs to the cake mold (24cm - mold size). Add the first layer (half of the mixture) and add the cheese, sausage, and mozzarella.
5. Cover the cake with the other half of the mixture and sprinkle with parmesan and breadcrumbs. Add a drizzle of olive oil.
6. Transfer to the oven and bake at 180Β°C/360Β°F for 35 minutes. Cut a slice after baking and serve.
