Heart-shaped apple pie: perfect to prepare for Valentine's Day!

INGREDIENTS
760g (6 1/4 cups) of all-purpose flour
320g (2 3/4 cups) of powdered sugar
30g of vanilla sugar
A pinch of salt
320g (1 1/2 cups) of butter
3 eggs
For apple sauce
120g (1/2 cup) of butter
550g of apples
110g (1/2 cup) of sugar
110g (1/2 cup) of light brown sugar
Cinnamon
Apricot jam
Sugar
Powdered sugar
METHOD
1. In a bowl with flour add the powdered sugar, vanilla sugar, and salt, and whisk. Add the butter and mix with the fingers. Add the eggs and continue with kneading. When the dough starts to form transfer it to the working surface and knead it with hands to obtain compact dough.
2. Cut the dough in half and wrap each half in cling film. Transfer to the fridge for 1 hour.
3. In a pan add the butter, apple slices, sugar, light brown sugar, and cinnamon and mix on low heat to caramelize the apple slices.
4. Place a sheet of parchment paper on the working surface and place the first half of the dough. Roll it out and pierce with the heart mold (bottom part) to obtain the heart shape. Remove the excess of the dough.
5. Split the other half of the dough in half and place one half on parchment paper. Roll it out in a rectangular shape and cut it into stripes. Repeat the process with the other half.
6. Start making one-half of the weave. Alternately lift the classic pastry strips (odd strips) and fold them in half on themselves. Take the strip from another half of the dough and place it vertically on the unraised strips (even strips). Continue like this until one-half of the braid is finished.
7. Once half of the braid is finished, proceed like the other half—Pierce with the heart mold to obtain the heart shape (top part). Remove the excess of the dough. Transfer to the fridge for 2 hours.
8. Spread the apricot jam on the bottom part of the heart shape and add a few spoons of apple sauce.
9. Cover the pie with the top part of the heart shape and press it on the side to close. Transfer to the baking tray covered with parchment paper.
10. Sprinkle with sugar and transfer to the oven. Bake at 180°C/360°F for 40 minutes.
11. Decorate apple pie with powdered sugar after baking, cut a slice, and serve.
