published on 27 February, 2024 at 13:00
INGREDIENTS
for 4 people
600g of salmon
2 potatoes or 2 fennels
3 spring onions
200g of green beans
For the emulsion
20ml of extra virgin oil
1 clove of garlic
Salt to taste
Juice of half an orange
1 teaspoon of mustard
15ml of soy sauce
METHOD
1. Start by creating the paper boat, take sheets of parchment paper, fold them back on themselves, and tie the ends with a string.
2. Then open and widen the center, this way you will get the boat.
3. Now portion the salmon and make a central cut in the middle of each fillet, so that you can open it.
4. In the boat now make a bed of very thin-cut potatoes. Blanch them previously, or if you want you can use fennel.
5. Add onions and previously cooked green beans.
6. Season with salt, cover with salmon fillet and brush with oil emulsion.
7. Bake at 180 degrees for 10-15 minutes, you will not have to overcook or it will become blocked.
8. Now they're ready to be tasted!
