Zucchini stuffed roll: simple, fast and mouthwatering savory meal

Ingredients:
3 medium zucchini
6 eggs
100g of Parmesan
salt
extra virgin olive oil
parsley
250 g Philadelphia or other cream cheese
200 g cooked ham
Directions:
1. First grate the zucchini.
2. Squeeze them well to remove all the water.
3. Mix the eggs with parmesan, salt, parsley and then add the courgettes.
4. Pour the mixture onto the oven tray and cook at 200° for 20 minutes.
5. Stuff and roll the courgette omelette.
6. Wrap in cling film and leave in the fridge for at least 2 hours.
7. Then cut and enjoy this wonder.
