Pumpkin spice latte: the perfect autumn drink!

INGREDIENTS
for pumpkin syrup:
100g of honey.
120g of water.
1tsp cinnamon.
1tsp of ginger powder.
1tsp of cloves.
1tsp of nutmeg.
100g of pumpkin puree.
for pumpkin spice milk:
1 cup of milk (about 125g).
1 cup of espresso.
3tbsp pumpkin syrup.
Fresh whipped cream to taste
Spice mix (for dusting) to taste
METHOD
1. Start by preparing pumpkin syrup: cook the pumpkin in the microwave at full power for 15/20 minutes, then easily remove the peel.
2. Mix the spices and add them to a saucepan with water and sugar and boil the mixture.
3. Remove the pan from the heat, add the cooked pumpkin and shake, let the mixture cool.
4. Once cold, strain the pumpkin syrup.
5. Whip the milk, if you can’t, simply heat it, then whip the cream and put it in a sac à poche.
6. Now you are ready to compose your pumpkin spice milk: in a cup put the espresso, then the pumpkin syrup, hot milk and finally the whipped cream sprinkled with a mix of spices. Your autumn drink is ready!
