Bullseye pie: beautiful and delicious!

INGREDIENTS
1 egg
100g (½ cup) of sugar
120ml (½ cup) of vegetable oil
Zest of 1 lemon
270g (2 1/6 cups) of all-purpose flour
16g of baking powder
170g (½ cup) of plum jam
2 plums, chopped
1 peach, chopped
2 apricots, chopped
METHOD
1. Preheat the oven to 180C/350F.
2. Whisk egg with sugar, lemon zest and vegetable oil. Add flour and baking powder into the liquids, and mix well.
3. Take ⅔ of the pastry and spread it in an 18 cm tart pan to cover both the bottom and the sides of the pan.
4. Form strips using ⅓ of the pastry left. Make circles using prepared strips. Pipe jam into circles and top with plums, apricots, and peaches alternating them.
5. Bake for 25 minutes, let cool down and serve topped with powdered sugar.
