Roasted Red Pepper Wrapped Cheese Rolls

INGREDIENTS
4 bell peppers
200g (1 cup) of robiola cheese
2 sprigs of basil
salt and pepper
2 garlic cloves, sliced
50ml (3 tbsp) of olive oil

METHOD
1. Preheat the oven to 190°C/374°F.
2. Bake whole bell peppers for 40 minutes. Transfer them into a plastic bag and set aside to sweat until cooled down.
3. Carefully remove all the seed and skin of each bell pepper and slice it into thirds.
4. Place bell pepper slices into a bowl and mix with olive oil and garlic. Set aside for 30 minutes.
5. Mix robiola with salt, pepper, and sliced basil.
6. Spread the filling on top of each pepper and roll as shown in the video.
