Octopus and potato salad: a simple and delicious summer dish

INGREDIENTS
1 octopus
2 bay leaves
1kg of potatoes
70ml (1/4 cup) of lemon (juice)
70ml (1/4 cup) of extra virgin olive oil
Salt
Pepper
Parsley
METHOD
1. Pour the hot water into the big pan, add the bay leaves, and bring it to a boil. Submerge just the tentacles of the octopus in the boiling water for a few moments, then remove the octopus from the pan. Repeat this process 2-3 times, or until the tentacles are very curly. After that, submerge the whole octopus in the water, cover it with the lid, and cook for 50 minutes over medium heat. Remove from the heat.
2. Add the potatoes to the pot full of water and boil them for 25 minutes. Remove from the heat.
3. Cut the octopus and potatoes into pieces to prepare them.
4. For the dressing in a small bowl mix the lemon juice, extra virgin olive oil, salt, and pepper.
5. Add the prepared octopus and potato pieces and pour the dressing on them. Mix well.
6. Sprinkle with parsley, mix all again and serve.
