Lemon cookies: they are ready in just a few minutes!

INGREDIENTS
120g (1/2 cup) of butter (soft)
220g (1 cup) of sugar
1 egg
1 lemon (zest)
1 lemon (juice)
170g (1 1/4 cups) of flour
12g (3/4 tbsp) of baking powder
A pinch of salt
Yellow food coloring
Powdered sugar
METHOD
1. In a mixing bowl add the butter and sugar and mix until sugar dissolves. Add the egg, lemon zest, and lemon juice and continue mixing. Finally sift the flour, baking powder, salt, and food coloring and mix to combine. Cover with cling film and transfer to the fridge for 1 hour.
2. After time has elapsed take the mixture with the help of the spoon and make the balls. Cover them with powdered sugar.
3. Transfer the balls to the baking tray covered with parchment paper.
4. Bake in oven at 180°C/360°F for 15 minutes. Let them cool after baking and serve.
